Innovative Technology to Reduce Food Waste

A groundbreaking development in the field of food preservation has emerged with the creation of the UK\’s first \”artificial nose.\” This high-tech device is designed to detect when food stored in a fridge is nearing its expiration date, potentially helping households reduce waste significantly.

The innovative system, developed by Newcastle University, uses a sensor-enabled setup installed inside a fridge. It monitors environmental changes that occur as food begins to spoil. When the system detects these changes, it sends an alert to a mobile application, prompting users to consume the food before it goes bad.

This technology has been rigorously tested across various types of food, including fruits, vegetables, meat, and dairy products. The goal is not only to identify when food is about to spoil but also to provide users with valuable insights into their purchasing habits and waste patterns. By highlighting the economic and environmental impacts of food waste, the system aims to encourage more responsible consumption behaviors.

Dr Oktay Cetinkaya, a lecturer in sensor systems at the university, emphasized the importance of this approach. He stated, \”One of the major goals is to provide users with statistics on how much they purchase and waste – with its economical and environmental impact – thereby encouraging a behavioural change, which is key to waste less in principle.\”

The system functions as an \”artificial nose\” by combining multiple sensor signals to detect early signs of spoilage, including odours that are not visible to the naked eye. This capability sets it apart from traditional methods that rely solely on expiry dates or user judgment.

Key Features of the Waste-Not! App

The Waste-Not! app offers several advantages over existing solutions. It utilizes low-cost sensors to gather data on the freshness of food. This data is then converted into an objective measure of freshness, enabling users to make more informed decisions about their food.

  • Unlike conventional approaches, which often depend on expiry dates or passive sensors that provide limited information about air quality, the Waste-Not! system integrates sensor-informed objective freshness into decision-making.
  • The device measures temperature, relative humidity, and gases emitted during different stages of food spoilage. These details are uploaded to a database and compared against a fridge inventory to identify any mouldy food.


Dr Cetinkaya added that the integration of sensor data into the app\’s functionality allows for a more accurate assessment of food freshness. This feature enhances both safety and effectiveness, ensuring that users can trust the system\’s alerts and recommendations.

Impact on Food Waste

According to the Waste and Resources Action Programme, 10.7 million tonnes of food were wasted in 2021. The value of edible food waste from households reached £17 billion. With the introduction of the Waste-Not! system, there is hope that such figures can be reduced significantly.

By providing real-time information about food freshness, the system empowers users to make better choices about what to eat and when. This not only helps in reducing household waste but also contributes to a more sustainable approach to food consumption.
